My daughter was craving cinnamon muffins last weekend, so I told her to go ahead and make some. 🙂 (Aren’t I a terrible mother?) This is the recipe I found (and modified) for her to use. Feel free to double it, they’re sooo delicious!
- 1 1/2 c flour
- 1/2 c sugar
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 c milk
- 1/4 c+ brown sugar
- 2 tsp bakingpowder
- 1 egg
- 1/2 c vegetable oil or applesauce (for a lower fat version)
Combine all ingredients. Mix until just blended (don’t over mix). Pour into muffin cups or tins (filling each about 2/3 full (my daughter, not knowing any better filled them all the way up (and I was out when she was cooking). We ended up with loads of delicious muffin bits all over the baking sheet the muffin cups were on).
Bake at 350 degrees for 18 minutes, but check after 15 to make sure they don’t dry out.
Oh. My. Goodness! They were delicious!
